Vana Belle, a Luxury Collection Resort, Koh Samui and Sheraton Samui Resort are pleased to announce the appointment of Mr. Franz J. Estermann as Executive Chef for both properties. Chef Estermann, who is a Swiss national, brings a wealth of experience having worked for more than 30 years in international hotel management. An experienced professional in the culinary field, Chef Estermann has worked in first-class hotels in Switzerland, Sweden, Middle East, Macao, Hong Kong, China and Thailand. Speaking of his new appointment, Chef Estermann said “I am honored to work with the professional teams here at Vana Belle Resort and Sheraton Samui Resort and look forward to further elevating the dining experience for hotel guests and the local community here in Koh Samui”.
As well as creating exciting new menus for the resort’s restaurants and bars, Chef Estermann will introduce two signature dishes at a special Wine Dinner at Sheraton Samui Resort on Friday 26th February 2016. The first is a Mediterranean seafood soup, enhanced with garden herbs and saffron pistils. A main course of Duck breast ragout with foie gras, caramelized onion and apple, truffle honey mustard juice on borlotti bean risotto serves as a perfect accompaniment to the fine Tuscan wines from the Castello Banfi winery. The 5-course set menu created by Chef Estermann is paired with 6 Premium wines including Brunello di Montalcino 2010, rated 93 points in Wine Spectator. The price of the Wine Dinner is Thai Baht 1,900++ per adult with the event starting at 7:00 PM at Coco Spice Restaurant.
